If you think the way to a man's heart (or other parts)is through his stomach, try this one!!

Shrimp Picante

2 tablespoons olive oil

1 medium yellow onion chopped

3 cloves garlic minced

1 pound plum tomatoes seeded and rough chopped

1 teaspoon salt

1 28 oz can Ro*Tel Diced Tomatoes & Green Chilies

3 cups water

2 cups jasmine rice

3 tablespoons butter

1 ½ pounds peeled and deveined large shrimp (21-25)

6 tablespoons cilantro chopped

Heat the oil in a large (12” fry pan) over medium heat.  Cook onions for 3 minutes until limp.  Add garlic, tomatoes and salt.  Cover and cook for additional 15 minutes.  Add Ro*Tel Diced Tomatoes & Green Chilies and cook for another 5 minutes until bubbly hot.

Meanwhile, bring water to a boil in a 2 quart saucepan and add rice.  Reduce heat, stir and cover.  Simmer for 20 minutes until rice is done.

5 minutes before the rice is finished, melt butter in a large 12” fry pan over medium high heat.  Add shrimp and cook for 2 minutes on each side until shrimps are just cooked and pink.

Place rice onto serving platter, top with shrimp then sauce and sprinkle cilantro over sauce and serve!
